- Abstract
- Trans fatty acids are a by-product of industrial hydrogenation of vegetable oils. Their role in promoting vascular atherosclerosis is scientifically established, as well as the decrease of cardiovascular death when TFA in the food are lowered. Regulation in many countries has lead to a lower exposure through foods. In Belgium it is not mandatory to mention TFA presence in food products; sometimes it is suggested by "palm fat" or the like. Data about their presence in different products have been published in several countries but not in Western Europe and Belgium. 8 references of original papers.
