Inhibition in vitro d'enzymes digestives par les tanins condensés du sorgho (Sorghum bicolor L. (Moench))

Abstract
Sorghum condensed tannins (proanthocyanidins) from a birdproof variety, strongly inhibit digestive enzymes in vitro, namely alpha-amylase and trypsine, even at low concentrations. This inhibition is correlated with the concentration of condensed tannins according to a quadratric relation for both enzymes. The analysis of the nature of inhibition by the double reciprocal method of LINEWEAVER-BURK shows that the inhibitor acts on the velocity of reaction and that this inhibition is non-competitive. These findings could explain the low dry matter and protein digestibility of food containing condensed tannins, which has been observed in vivo and in vitro.
