Project: On farm food processing in Europe : characteristics of farm products : attitude of consumers and markets.

abstract
Despite the fact that farm food processing becomes more important, it is seldom taken into account. The aim is to determine the sensory and symbolic features which, for consumers, distinguish farm products from foodstuffs manufactured by particularly the agro-industry. The components in the production chain which generate these characteristics are identified. Next to this perception of prices in relation to quality perception is investigated.
