Project: Enterococci in food fermentations - Functional and safety aspects.

Nine European partners will collaborate to investigate the taxonomic relationships between enterococcal strains from food, veterinary and clinical origin. Furthermore the functional - technological and health promoting - properties of selected strains will also be studied in order to guarantee the safety of dairy products obtained through fermentation of enterococci.
