Project: Application of the Denaturing Gradient Gel Electrophoresis (DGGE) technique for efficient monitoring of bacterial shelf-life and safety of food products

abstract
This project proposal aims to evaluate the application of the DGGE technique in food industry with particular emphasis on (i) rapid characterization of natural contamination flora, (ii) detection of the possible origin and spread of spoilage organisms and (iii) monitoring of the population dynamics during the production and distribution process by comparing DGGE profiles sequentially obtained in time.
