abstract
The presence and influence of microbiota and microbial enzymes on the quality of wheat, for use in bread making industry, will be investigated. Molecular techniques are used to characterize the microbial colonization, the location and quantity of the microbial enzymes in wheat is looked at and it is investigated how the microbial en enzymatic load on wheat can be reduced.
