- Unripe apples can be made to ripen prematurely by the application of volatile carboxylic acids, and a link was made tentatively between lipoxygenase activity and the production of small acids and ethylene. The relation lipoxygenase-carboxylic acids-ethylene-the start of ripening will be studied further in apples.
