Project: An enzymatic study of Beta-xylanase, Alpha-L-arabinofuranosidase and Beta-xylosidase enzymes produced by Saccharomyces cerevisiae strains and the evaluation of these strains for industrial applications.

In this study, the genes of several xylan degrading enzymes will be expressed in yeast. The specificity of the pure enzyme will be fully characterized by the use of chromophoric substrates. The functionality of the enzyme will be evaluated in the baking and brewing proces, both by the addition of the purified enzyme as well as by 'in situ' production by the transformed yeasts.
