Project: Studies on the rheoviscometric behaviour of irradiated starch-based food materials.

The rheoviscometric behaviour of starch-based materials will be investigated in terms of shear stress and apparent viscosity by dose and dose rate dependency. The effects of particle size and storage time (after irradiation) on the rheological properties of starches will also be considered. Special emphasis will be given to the correlation of the rheological properties with the sample obtainment and characteristics and with gel forming conditions. In the same extend the correlation between the rheoviscometric method and other methods to identify the irradiation treatment will be made.
