Project: Development of an integrated strategy for controlling the allergen issue in Belgian food and catering industry

The increase of food allergies represents an important health problem, nevertheless an integrated strategy to control the allergen issue is lacking. Therefore the objective of this project is to develop strategies and practical guidelines to reduce the allergenic risk in the food industry. For this good detection and quantification methods will be developed taking into account the effect of processing.
