- Maltose phosphorylase (750 aa) catalyses the phosphorylysis of maltose in the presence of inorganic phosphate. It is present as a dimer (Lactobacillus brevis) and its structure is currently determined at GMBA-ESIL (Marseille). A multidisciplinary approach should allow a prompt description of the enzymology of this new class of enzymes.
